Ingredients
For the Pistachio Crust
- 1 cup (130g) all-purpose flour
- ½ cup (60g) ground pistachios
- ¼ cup (50g) granulated sugar
- ½ cup (115g) unsalted butter, cold and cubed
- 1 egg yolk
- 1 tablespoon cold water
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
For the Cherry Filling
- 2 cups (300g) fresh or frozen cherries, pitted
- ¼ cup (50g) granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon vanilla extract
For Garnishing
- ¼ cup (30g) chopped pistachios
- Powdered sugar, for dusting (optional)
- Whipped cream or vanilla ice cream (optional)
Instructions
1. Prepare the Pistachio Crust
- In a food processor, blend flour, ground pistachios, sugar, and salt.
- Add the cold butter and pulse until the mixture resembles coarse crumbs.
- Add egg yolk, vanilla extract, and cold water. Pulse until the dough just comes together.
- Shape the dough into a disc, wrap in plastic wrap, and refrigerate for 20 minutes.
2. Make the Cherry Filling
- In a saucepan over medium heat, combine cherries, sugar, cornstarch, and lemon juice.
- Cook for 5–7 minutes, stirring, until the mixture thickens. Remove from heat and stir in vanilla extract. Let it cool.
3. Assemble and Bake
- Preheat oven to 350°F (175°C).
- Roll out the chilled dough and cut circles to fit small tartlet molds. Press the dough into the molds and trim any excess.
- Prick the bottom of each tartlet shell with a fork. Line with parchment paper and add baking weights or dried beans.
- Blind bake for 10 minutes, then remove the weights and bake for another 5 minutes until golden.
- Spoon the cherry filling into the baked crusts. Sprinkle with chopped pistachios.
- Bake for another 8–10 minutes.
4. Serve
- Let the tartlets cool slightly. Dust with powdered sugar and serve warm or at room temperature.
- Optionally, top with whipped cream or a scoop of vanilla ice cream.
